Tuber aestivum vittadini, better known as the summer truffle, is one of the most widespread truffle varieties. It has a milder flavour and a generally regular, rounded shape, making it the perfect introduction to the world of truffles.

Tuber brumale is a truffle characteristic of the winter season. Its aroma is more intense than that of other black truffles, while its interior is marbled with lighter shades.
Harvest season: January – February
Tuber uncinatum is very similar to the black summer truffle, but has a more pronounced aroma and a darker interior. Its rich flavour is especially distinctive in warm dishes and premium gastronomy.
